Homemade Egg Noodles Pasta

Total time : 33 mins Servings: 6-7 Cuisine : Italian


Ingredients: For pasta

  • 2 cups (120 grams) all-purpose flour

  • 2 eggs, beaten

  • ½ teaspoon (2.3 grams) butter

  • a pinch of salt

For accompaniment

  • Crispy fried chicken (optional)

  •  1 large Carrot

  • 4-5 French beans

  •  1 medium Onion

  •  ½ teaspoon Oregano

  • Salt and pepper as per need






Instructions:

Step 1

In a large bowl, stir together the flour and salt. Add the beaten eggs, and butter.Once a dough ball starts to form ,get it out on a clean kitchen surface and knead until smooth, about 5-10 minutes. Let it rest in a cling wrapped bowl for 20 minutes.


Step 2

Meanwhile,cut the veggies coarsely and the fried chicken into cubes.Add to a pan and saute with salt and pepper for about 2 minutes till crunchy. Add the oregano and cook until fragrant, about 30 seconds.


Step 3

On a floured surface, roll out the dough in a rectangular shape with 1/8 or 1/4 inch thickness. Cut into desired lengths or shapes. Allow to air dry before cooking.


Step 4

To cook fresh pasta, in a large pot with boiling salted water cook until al dente. The perfect al dente noodle should be mostly chewy but with a little resistance and be slightly firm .The pasta usually requires 60 -90 seconds to cook,then drain the excess water of the cooked pasta in a strainer.


Step 5

Add the cooked pasta to the chicken and veggies and give it a toss in the pan. And Voila !!!
